The brothers Enrique and Carlos Valentí are the brains behind this bar, which pays tribute to the local custom of tapas. Located in the area of Ibiza, right by El Retiro Park, this bar is reinventing classic tapas and light bites. In fact, Carlos Valentí was crowned champion at the 4th National Pinchos and Tapas Competition in 2008.
The decoration of this bar, created by interior designer Cristina Carulla Studio, includes striking green walls, tricolour stone floors, a large stainless steel bar, and a 1950s-style frontage, with a large glass picture window that showcases the interior.
The menu is short but features popular dishes such as pickled anchovies (from Castro Urdiales, Cantabria), gildas (olives, anchovies, and chilli peppers), smoked pickled mussels, cockles (from the Lonja de Noia fish market in Galicia), Russian salad, preserved quail drumsticks, and preserved foie mi-cuit (following the recipe of chef Ange García, created in the 1980s for his restaurant Lúculo).
Hermanos Vinagre also own another bar at No. 17 Calle Gravina.
