After the departure of chef Aurelio Morales—the creative force responsible for securing this restaurant its Michelin star between 2018 and 2022—Hotel Urban's restaurant is open for business once more. Now, it's headed up by young chefs Javier Sanz and Juan Sahuquillo, who are responsible for the success of Cañitas Maite and who were named rising stars at Madrid Fusion 2021. The dishes are shaped and guided by excellent quality ingredients, simplicity and essence, earning this restaurant a Michelin star in the 2024 edition of the prestigious guide.
Only 22 people per sitting can sample this unique dining experience, composed of two tasting menus: Classics (available from Tuesday to Friday at lunch time) and Seasonal, with 11 and 17 steps respectively, which includes many dishes created exclusively for CEBO, based on a small number of exceptional ingredients and precise techniques to preserve the taste, texture, and nature of each product. The wine cellar at CEBO continues to offer a wide variety of national and international wines, and the option to harmonise them to each menu.
The concept created for CEBO is inspired by a cuisine stripped bare of all artifice, made with the best seasonal ingredients. Cuisine that offers depth and nuance, which explores flavours, advocating simplicity and the elemental, based on grilling exceptional ingredients such as Andine Cornue tomatoes, Langoustines, Aged Red Shrimp, Line-Caught Squid, Beef from Working Cattle, Ortolan-style Quail, and Smoked Caviar, among other dishes.
